Birch sap tapping
Tapping birch tree sap is one of our favorite ways to usher in the spring season. Tapping Into Spring is our curriculum program designed to introduce K-12 students to responsible tree sap harvest, practice math skills, explore tree health and climate effects, and to taste a delicious product of photosynthesis. Kids and teachers tap trees right outside in their own schoolyards!
This spring we are fortunate enough to have use of the UAF Lola Tilly building (our new STEM to STEAM Studio), and we will be setting up the kitchens for a community sap-to-syrup boil-down production. We are currently conducting meetings with interested and knowledgeable parties about the best way to bring about a Birch Research and Development group. Birch is such a valuable and plentiful resource all around us. We are in an excellent position to discover more in order to disseminate information to help build a strong and resilient industry and knowledge base.
